【摘要】:ThisInternationalStandardspecifiesamethodusinghigh-performancesize-exclusionchromatography(HPSEC)todeterminethecontents,asmassfractions,ofpolymerizedtriacylglycerols(PTAGs)inoilsandfatswhichcontainatleast3%(frompeakareas)ofthesepolymers.PTAGs(strictlyspeakingdimericandoligomerictriacylglycerols)areformedduringtheheatingoffatsandoils,andthus,themethodservestoassessthethermaldeteriorationoffryingfatsafteruse.Thismethodisapplicabletofryingfatsandfatsandoilsthathavebeenthermallytreated,providedthatthecontentofPTAGsisatleast3%.Itcanalsobeappliedtothedeterminationofpolymersinfatsforanimalfeedstuffs,althoughinthiscase,theextractionmethodusedcanhaveaninfluenceontheresult.NOTEForfurtherdetails,seeISO6492.
